The Red Book of Ossory, a medieval manuscript from the 14th century, finally made its way back to Ireland this summer, bringing with it one of the world’s oldest whiskey recipes.
This ancient tome was the pride and joy of Bishop Richard de Ledrede, who ruled over Kilkenny from 1316 to 1360. Known for its royal documents and legal info, the book’s red binding isn’t the only thing making it famous.
Inside, it holds Ireland’s very first written account of distillation—aka the ‘First Drop’—and the first mention of “aqua vitae” (which you might know as whiskey). Distillation, brought to Ireland by monks in the 8th century, has become a cornerstone of Irish culture, and this old manuscript is a testament to that.
It can now be viewed as part of a yearlong exhibition at St Canice’s Cathedral, Kilkenny.
