Pichet Celebrates 15 Years on Trinity Street

With all the challenges we’ve been witnessing in the city’s restaurant and hospitality business of late, it’s nice to see some restaurants continue to survive and thrive.

We were delighted to see Pichet recently mark fifteen years in business, having successfully weathered challenges including the financial crisis that plagued Dublin in its first few years, and more recently, the Pandemic and cost of living crisis.

Founder and chef Stephen Gibson generously attributes Pichet’s success to the staff who worked there since 2009.

“This milestone is a testament to the hard work, passion and dedication of our entire team over the years who strive daily to create exceptional culinary experiences in Dublin City.”

Reflecting further on the experience of the past fifteen years at the Trinity Street brasserie, Gibson adds, “It’s been an incredible journey filled with countless memories, challenges, and triumphs.

We have grown and evolved, but our commitment to delivering innovative and delicious dishes remains.”

From the outset both Gibson and Head Chef Harry Quinn proved themselves determined champions of modern Irish cuisine, based on their shared values of cooking ‘nice simple food’ using the best, Irish and seasonal produce they could find.

This ethos is further reflected in a special commemorative e-book featuring a range of fifteen classic Pichet recipes, published online as part of celebrations to mark the big milestone.
