We’ve been enjoying a taste of southern style cooking courtesy of Gumbo Etc at The Glimmer Man in Stoneybatter.
The Dublin pop-up venture which specialises in cuisine from down yonder in New Orleans has been stepping in behind the pass at the Vietnom Food Truck while the resident foodies there enjoy a well-earned winter break.
As might be gleaned from the name, their speciality is the classic New Orleans dish Gumbo, made with a dark roux, homemade stock, vegetables, fish, and meat, served over rice.
The ‘Etc’ part of the menu features a host of tasty homemade dishes cooked from scratch, including Cajun Colcannon, a spicy take on the traditional Irish favourite. Delicious Roast Beef Po’ Boys are also part of the proposition, made with tender slow-cooked shredded beef and served on a toasted soft French bread roll from The Bretzel Bakery.
Fill yer boots on Fridays and Saturdays between 6pm and 9.30pm, before they pack away their cookware on Saturday March 11th to make way for the return of Vietnom.
