Cheesy food truck Griolladh has been sizzling along nicely since first being established by pals Jacob Long and Jack Brennan in lockdown last year.
The city’s appetite for their tasty grilled cheese offerings has seen the venture expand from a garden in Malahide to six regular pop-ups, with locations as far afield as Bray, Phibsborough and Dundrum.
An extended menu now includes breakfast, pastries and coffee, while the Malahide duo have recently teamed up with Daniel Hannigan, formerly of Mister S, to launch a new fried chicken venture called CHICC.
The trio are currently on the hunt for a sit-down venue for the enterprise, in addition to seeking out a more permanent bricks and mortar base for their popular Griolladh endeavour.
