Three Storey is bedding in on St. Stephen’s Green after opening in the spring with a promise to be a “modern Irish dining, a café, spritzeria and cocktail bar under one roof serving coffee, cocktails, wines and aperitivi in a contemporary sophisticated setting”.
The cocktail side of things is helmed by Slovak Martin Holec, formerly of The Sitting Room at Delahunt, and he’s been busy bringing new tastes to the town such as the Pardona, his mash-up of a Margarita and Paloma in which he’s redistilled tequila with chargrilled pardon peppers and combine it with grapefruit juice.
