Welcome Fierfield to the whiskey mix. A new botanical Irish hand-crafted in small batches, Fierfield is the child of Louise McGuane, founder of J.J. Corry Irish whiskey and modern whiskey bonder, along with cocktail bartender Mr Lyan who owns the Lyaness in London.
Whiskey bonding is where “you source whiskey from other sources and you custom-blend it to make your own house style,” says McGuane.
“For Fierfield, we cold-distill bread, butter and honey at low temperatures to capture their richness, aromatics and all the concentrated notes that complement the whiskies. We then press heritage apples, and reduce this with selected botanicals to give body, flavour and weight to the blend. These elements are married with grain and malt whiskies sourced from across Ireland that age in J.J. Corry’s warehouses.”
